Job description
- Provide excellent culinary and organization skills
- Assume all responsibility and accountability for all production functions
- Ensure quality of food items and plate decorative effects
- Set up and oversee menu development planning, portion and cost controls
- Assist in the development of recipes and sauces of the main menu, and develop brunch and bar nibbles menus
- Standardize recipes and production procedures to keep a continuous high level of food quality
- Ensure consistent quality of ingredients by suppliers, order and receiving of all general supplies
- Monitor and ensure ongoing quality control and hygiene of food preparation
- Provide staff training to ensure maximum productivity, waste control, food hygiene control, and deliver excellent culinary and organization skills
Requirements
- Minimum 3 years of working experience in Western restaurants, Experience in Hong Kong restaurants would be an advantage
- Str0ng working knowledge of food storage and handling, food recipes and preparation, seafood cooking techniques and procedures
- Good cooking skills to prepare seafood products and other high-end quality products
- Good communication and management skills
- Enthusiastic, creative, independent, organized and reliable personality
- Good command of written and spoken English, Good command in Cantonese would be an advantage, French is a plus.
- Candidate with less experience will be considered as Sous Chef.
